Selecting the Apples

The first step in creating delicious caramel apple butter is choosing the right apples. Different apple varieties have different flavors, textures, and levels of sweetness. For a well - balanced apple butter, a combination of tart and sweet apples works best. Some popular tart apple varieties include Granny Smith and Jonathan, while sweet apples like Fuji and Gala can add a natural sweetness. Aim for a ratio of about 2 parts tart apples to 1 part sweet apples.

When selecting apples, look for ones that are firm, blemish - free, and have a good aroma. Wash the apples thoroughly under running water to remove any dirt or pesticides. You don't need to peel the apples, as the skins contain valuable nutrients and add color to the apple butter. However, core the apples and cut them into quarters or eighths for easier cooking.

Cooking the Apples

Place the chopped apples in a large pot or Dutch oven. Add a small amount of water, about 1/4 to 1/2 cup, to prevent the apples from sticking to the bottom of the pot. Bring the apples to a boil over medium - high heat, then reduce the heat to low and let them simmer, covered, for about 20 - 30 minutes. Stir occasionally to ensure even cooking. The apples should become soft and mushy during this process.

Once the apples are cooked, use a potato masher or an immersion blender to puree them into a smooth consistency. If you prefer a chunkier apple butter, you can leave some small pieces of apple intact. At this point, you can also add some spices to enhance the flavor. Common spices for apple butter include cinnamon, nutmeg, and cloves. Start with about 1 - 2 teaspoons of cinnamon, 1/2 teaspoon of nutmeg, and 1/4 teaspoon of cloves, and adjust according to your taste.

Making the Caramel

To make the caramel, you'll need granulated sugar, butter, and heavy cream. In a separate saucepan, melt 1/2 cup of butter over medium heat. Add 1 cup of granulated sugar and stir constantly until the sugar has dissolved and the mixture starts to turn a light golden brown. This process is called caramelization. Once the caramel has reached the desired color, carefully pour in 1/2 cup of heavy cream. The cream will cause the caramel to bubble up, so be cautious. Stir the caramel until it is smooth and well - combined.

Combining the Apple Puree and Caramel

Slowly pour the caramel into the apple puree, stirring constantly to incorporate it evenly. The caramel will add a rich, sweet flavor and a beautiful color to the apple butter. Continue to cook the mixture over low heat for another 10 - 15 minutes, stirring frequently to prevent it from burning. The apple butter will thicken as it cooks.

Preserving and Canning

If you want to preserve your caramel apple butter for a longer period, you can can it using a water - bath canning method. First, sterilize your canning jars and lids by boiling them in a large pot of water for 10 minutes. Ladle the hot apple butter into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars clean with a damp cloth to ensure a good seal.

Place the lids on the jars and tighten the bands. Lower the jars into a large pot of boiling water, making sure they are fully submerged. Process the jars in the boiling water for about 10 - 15 minutes, depending on your altitude. After the processing time is up, remove the jars from the water and let them cool on a towel. As the jars cool, you should hear a popping sound, indicating that they have sealed properly.

Store the canned caramel apple butter in a cool, dark place for up to a year. Once opened, keep it refrigerated and consume it within a few weeks. Enjoy your homemade caramel apple butter on your favorite breakfast items or share it with friends and family as a delicious gift.
